Dr. Suess, how we loved you! In our little home children’s library, yours were the greatest number of books. We read them endlessly, and I even read some of them into a tape recorder so my children could listen, to their delight, a third and fourth time or more.

So many of the words you scribed are still permanently etched in my brain. Sam I am… I love green eggs and ham.

And so it was the latter sentence reverberated in my mind yesterday morning as I made my breakfast. I beat two eggs in a bowl and added a chopped thin slice of ham. Back in the refrigerator, I pulled out a bowl of greens, curly kale I had cooked the previous evening. I also slid out my favorite topping for kale: leftover sautéed pine nuts, garlic, and raisins.

I mixed a handful of greens into the eggs and ham, mixed and then scrambled them together. I warmed the topping and sprinkled some on top of the eggs. My adult version of green eggs and ham. The greens are also delicious on the side, but yesterday I wanted to take a photo of green eggs.

Since moving to the south fifteen years ago, I’ve fallen in love with greens that I’d never eaten in my life: arugula, beet greens, chard, kale, mustard greens, and watercress. Spinach had been my main green vegetable and, frankly, not too much of that. When, in 2006, Johnna Albi and Catherine Walthers published their Greens Glorious Greens! Cookbook, I began to broaden my scope of purchasing and preparing greens. I eat them nearly every day and celebrate how absolutely delicious greens are!

So much so, that I often incorporate them into my breakfast. With eggs, a side of nearly any cooked green vegetable is also delicious, for me, especially when lightly sprayed with balsamic vinegar. Quirky breakfast foods, you may reflect? For many, that may be true. Yet, why not give it a try and see what you experience?
